3 packets of Green’s golden butter cake mix
180 grams of melted butter, salt reduced
450mls of full cream milk
20cm x 7cm cake pan
canola spray oil
Food colouring, Red, Yellow, Blue
vanilla bean ice cream *optional
400grams of butter
2 1/2 cups of icing sugar
1 tbsp of vanilla essence
Purple – 2 drops of red + 1 drop of blue
Blue – 3 drops of blue
Green – 2 drops of yellow + 1 drop of blue
Yellow – 3 drops of yellow
Orange – 2 drops of yellow + 1 drop of red
Red – 3 drops of red
To create brighter layers simply add more of the drops with the same ratio. Ex. Purple – I used 4 drops of red + 2 drops of blue and mix until you achieve the desired shade.
Preheat oven to 180 degrees. Prep your cake tin with a light spray of canola oil and baking paper.
Start with one cake mix, add 2 eggs, 150 ml of milk and 60 grams of melted butter into a large mixing bowl. Using a hand mixer, mix on low speed until ingredients are combined than turn the speed up to medium for 2 minutes.
Now separate this batch in two small bowls and add the desired colour.
Add one batch to the cake pan as shown in the picture below and smooth off to create a flat base.
Place the cake into the oven for 18-20 mins give or take.
Repeat steps 4 & 5 until all the cakes are created. Allow to cool.
Prepare the icing by adding the icing ingredients together and blend nicely with a hand mixer.
Add a smudge of icing on the cake board to help keep the cake in one place.
Now start with the purple layer and add about 1/2 cm of icing, repeat with blue, green, yellow, orange and finally red stacking on top vertically. Making sure in between the layers have the same amount of icing. When adding on each layer, give a firm press so there isn’t any air bubbles stuck in between.
Once all the layers are complete, start icing the top and work your way around the cake. It may start to slant a bit so take your time icing.
Place in the fridge for an hour to set. Enjoy, serve at room temperature and vanilla bean ice cream.
