Gai = Chicken Pad = Stir-fried Khing = Ginger

ingredients:
500 grams of chicken breast, diced into bite size pieces
handful of mushrooms, chopped
1 brown onion, cut into strips
handful of snow peas, ends trimmed
1 red capsicum, cut into strips
half a bunch of shallots, cut into strips
piece of ginger, cut into match sticks or grated
2 gloves garlic, crushed
3 tbsp of vegetable oil
2 tbsp fish sauce
1 tbsp oyster sauce
dash of white sugar & pepper .. No need to add salt
create:
1. In a small bowl add the fish sauce, oyster sauce and sugar. Stir and set aside.
2. Using a wok, turn on high heat add the vegetable oil and swirl around to coat the base. Add the garlic and onion, stir for a minute than throw in the chicken and cook for a further few minutes. Turning the chicken pieces over, to ensure all pieces are seared.
3. Now throw in the vegetables, pour in the sauce and turn to low for around 15 mins stirring occasionally.
Enjoy with rice or noodles.
