3-4 Roma tomatoes, chopped julienne style
1 red onion, chopped julienne style
handful of fresh coriander, chopped
1/2 lemon, juiced
3 tbsp of olive oil
dash of salt & pepper
1. Chop the tomatoes and onions preferably julienne style. Combine tomatoes, onion, salt and pepper and toss in a bowl.
2. Now in a smaller bowl simply add lemon juice and olive oil and stir.
3. Pour the dressing over the tomato mixture, garnish with freshly chopped coriander and enjoy.
Tip: Julienne style is simply chopping the product into long strips.
