500 grams chicken breast
1 can whole peeled tomatoes
1 medium sweet potato
3 cm ginger, grated
1 tsp cumin seed
1 bunch of fresh coriander, chopped
1/2 tsp garam masala
2-3 gloves of garlic, crushed
1/2 tsp turmeric
1/2 tsp chilli powder
1 brown onion, chopped or sliced
2 tbsp olive oil
1. Pre heat oven to 200 degrees. Peel and chop the sweet potato into small pieces and sprinkle with cumin seeds. Add the sweet potato onto a baking tray and bake for around 15 mins or until golden.
2. Meanwhile, on medium heat in a large pan add olive oil, onion, garlic, turmeric, chilli powder and garam masala and stir until fragrant.
3. Now add chicken pieces, stir for 5 mins than add 1 can of whole peeled tomatoes and reduce to low for further 15 mins. Finally add the sweet potato pieces and simmer for around 5 more minutes.
4. Garnish with fresh coriander and natural Greek yoghurt.
