2-3 small bananas
1 tsp ground cinnamon
3/4 cup of self raising flour
1/2 cup of plain flour
1/2 cup of brown sugar
1/2 cup of full cream milk
60 grams of butter ( melted )
Preheat oven to 180 degrees. Using a loaf pan, grease the loaf pan with melted butter. Alternatively you can use canola spray oil.
In a large bowl, add the flours, cinnamon and sugar. Give a quick stir. In a separate bowl, place the milk, eggs, melted butter and banana and stir until combined. Try not to over mix as you want to taste the real bits of banana through each bite. Now add the banana mixture to the large bowl and gently fold it together. Pour the mixture into the loaf pan and add a single line of bananas as a decorative feature.
Now bake in preheated oven for 45 minutes. Remove from oven and place on a wire rack to cool down. Serve and Enjoy.
Makes around 10 small slices – can be served warm or cold
